Zombie
Alessandro Scire CalabrisottoShare
Potent, complex and shrouded in legend, the Zombie is the drink that launched a thousand tiki nights. Beneath its fruity, tropical exterior lies a formidable blend of rums so strong that its creator famously limited how many a guest could order. Equal parts cocktail and dare, the Zombie remains one of the most storied — and most respected — creations in the entire tiki canon.
History of the Zombie
The Zombie was created by Donn Beach, the founder of Don the Beachcomber, the Hollywood bar widely credited with launching the tiki movement in the 1930s. As the story goes, Donn mixed the drink to help a hungover patron get through a business meeting; when the customer returned and reported feeling like "the living dead" afterwards, the cocktail had its name.
The Zombie became a sensation, especially after it was served at the 1939 New York World's Fair, helping to spread tiki culture across America. Donn guarded his recipe jealously, using coded ingredient labels and pre-batched mixes so that even his own staff could not easily copy it. For decades the true formula was a mystery, and it was only through the painstaking research of later cocktail historians that authentic versions were reconstructed.
Recipe: How to Make a Classic Zombie
Ingredients:
- 45 ml (1.5 oz) aged Jamaican rum
- 45 ml (1.5 oz) gold Puerto Rican rum
- 30 ml (1 oz) overproof Demerara rum
- 20 ml (0.75 oz) fresh lime juice
- 15 ml (0.5 oz) falernum
- 10 ml (0.25 oz) grenadine
Instructions:
- Add all the rums, the lime juice, falernum and grenadine to a shaker, along with a dash of aromatic bitters and a small measure of grapefruit juice if you have it.
- Fill with crushed ice and blend or shake briefly to chill without over-diluting.
- Pour unstrained into a tall glass or tiki mug.
- Top up with additional crushed ice to fill.
- Garnish with a sprig of mint and a slice of citrus.
Tips for Perfection:
- Use a blend of different rums — the layered character is essential and cannot be replicated with a single bottle.
- Falernum, a spiced almond-and-lime liqueur, is key to the authentic flavour, so seek it out.
- Respect its strength: the Zombie is meant to be sipped slowly, not knocked back.

Curiosity: A Fun Fact About the Zombie
Donn Beach was so wary of imitators that he reportedly limited guests to just two Zombies each — not only because of the drink's strength, but to protect his secret. He disguised his ingredients under codes and pre-mixed blends, making the Zombie one of the most closely guarded recipes in cocktail history.
