Mezcal Margarita cocktail

Mezcal Margarita

Alessandro Scire Calabrisotto

Take the world's most beloved tequila cocktail, swap in smoky mezcal, and you have the Mezcal Margarita — a drink that is at once familiar and thrillingly different. The classic balance of agave, citrus and orange liqueur remains, but a whisper of campfire smoke transforms it into something deeper and more grown-up. If the standard Margarita is a holiday, this is the same holiday with a sense of adventure.

History of the Mezcal Margarita

The Mezcal Margarita is a modern variation on the classic Margarita, which itself emerged in the 1930s and 1940s as one of the defining tequila cocktails of the 20th century. The original formula — tequila, lime and orange liqueur — became a global icon, and as mezcal gained popularity among bartenders and drinkers in the 2000s and 2010s, swapping it in for some or all of the tequila was a natural evolution.

Mezcal's distinctive smokiness comes from how it is made: the agave hearts are roasted in earthen pits lined with hot stones and wood before fermentation, lending the spirit its unmistakable character. Where tequila must be made from blue agave, mezcal can be produced from many agave varieties, giving it enormous range. The Mezcal Margarita rode the broader wave of agave appreciation — led by influential drinks such as the Oaxaca Old Fashioned — and has since become a fixture on cocktail menus the world over, beloved for the way smoke and citrus play off one another.

Recipe: How to Make a Classic Mezcal Margarita

Ingredients:

  • 50 ml (1.75 oz) mezcal
  • 25 ml (0.75 oz) orange liqueur (such as Cointreau or triple sec)
  • 25 ml (0.75 oz) fresh lime juice
  • 10 ml (0.33 oz) agave syrup (optional, to taste)

Instructions:

  1. If you like a salted rim, run a lime wedge around the edge of the glass and dip in flaky sea salt.
  2. Add the mezcal, orange liqueur, fresh lime juice and agave syrup to a shaker.
  3. Fill with ice and shake hard until well chilled.
  4. Strain into your prepared glass over fresh ice, or serve straight up.
  5. Garnish with a lime wheel.

Tips for Perfection:

  • Taste before serving and adjust the agave syrup — ripe limes may need none at all.
  • Try a half-and-half split of mezcal and tequila if you want the smoke gentler.
  • A smoked or chilli-salt rim amplifies the cocktail's smoky, savoury edge beautifully.

Additional Recommendations

Variations:

  • Spicy mezcal margarita — muddle in fresh jalapeno or use a chilli syrup for heat.
  • Tommy's style — drop the orange liqueur and sweeten with agave alone for a purer agave flavour.
  • Fruit twist — add muddled mango, pineapple or prickly pear for a vivid seasonal version.

Pairings:

  • Tacos al pastor or other smoky, charred street food.
  • Fresh guacamole and salty tortilla chips.
  • Grilled prawns with lime and chilli.

Presentation:

  • Serve in a classic Margarita coupe or a tumbler with a half-rim of flaky salt.
  • A bright lime wheel or a dehydrated citrus slice makes a clean, striking garnish.

Curiosity: A Fun Fact About the Mezcal Margarita

There is an old Mexican saying, "para todo mal, mezcal, y para todo bien, tambien" — for everything bad, mezcal, and for everything good, the same. The Mezcal Margarita feels purpose-built to honour that cheerful philosophy.
