Tucked into Chicago's Fulton Market District, this is the cocktail bar that treats a drink the way a Michelin kitchen treats a tasting menu — with obsessive technique, theatrical presentation and an appetite for the impossible. It is less a place to grab a nightcap than a destination to be experienced, and it has reshaped what a cocktail bar can aspire to be.
History
The Aviary opened in 2011, the creation of restaurateur Nick Kokonas and chef Grant Achatz — the same partnership behind the celebrated restaurant Alinea. It was conceived out of a desire to challenge convention and to approach cocktails the way the team approached cooking, borrowing techniques and discipline from their kitchens.
That ambition was quickly rewarded. In 2013 the bar won the James Beard Foundation Award for Outstanding Bar Program, and it has since been regularly counted among the finest bars in the world. Today it sits within the same building as the restaurant Next, part of an interconnected culinary universe in Chicago's West Loop.
What Makes It Special
What sets the Aviary apart is its refusal to treat a cocktail as merely a mixed drink. Here, bartenders work like chefs inside what the team calls a "cocktail kitchen," applying culinary techniques, custom serviceware and a level of precision rarely seen behind a bar.
The detail extends to the ice itself: a dedicated ice programme produces bespoke shapes designed for specific drinks, each one engineered to dilute and chill in exactly the right way. Custom glassware and purpose-built tools turn each serve into a small piece of theatre, and the menu evolves with the seasons, ensuring no two visits are quite alike.

Curiosity: A Fun Fact About The Aviary
The bar takes its ice so seriously that it employs a dedicated "ice programme" to carve custom cubes and spheres for individual drinks — some cocktails are even served sealed inside a hollow ball of ice that the guest cracks open to release the drink within.
