Dale DeGroff, affectionately known as "King Cocktail," is a seminal figure in the modern cocktail renaissance. Born on September 21, 1948, in Rhode Island, DeGroff's journey into mixology began in the 1970s, but it was his tenure at New York City's Rainbow Room that truly set the stage for his influential career.

Reviving the Classics at the Rainbow Room

In 1987, DeGroff was appointed as the head bartender at the Rainbow Room, located atop Rockefeller Center. Under the guidance of restaurateur Joe Baum, DeGroff was tasked with revitalizing the bar's cocktail program. He delved into historical cocktail literature, notably Jerry Thomas's 1862 How to Mix Drinks, to resurrect forgotten pre-Prohibition cocktails. This dedication to authenticity and quality ingredients played a pivotal role in the resurgence of classic cocktails in contemporary culture.

 

Pioneering the Craft Cocktail Movement

DeGroff's influence extended beyond the Rainbow Room. His emphasis on fresh ingredients, precise techniques, and the art of bartending inspired a new generation of mixologists. He is often credited with laying the groundwork for the craft cocktail movement that gained momentum in the late 20th and early 21st centuries.

 

Authorship and Education

In 2002, DeGroff authored The Craft of the Cocktail, a comprehensive guide that has become an essential reference for bartenders and enthusiasts alike. The book offers over 500 recipes and delves into the history and techniques of cocktail making. Its success led to a revised edition, The New Craft of the Cocktail, published in 2020, which includes updated recipes and insights reflecting the evolving cocktail landscape.

 

Founding the Museum of the American Cocktail

In 2005, DeGroff co-founded the Museum of the American Cocktail in New Orleans. The museum is dedicated to preserving the rich history of cocktails and mixology in the United States, offering exhibits, educational programs, and events that celebrate the craft.

DeGroff's contributions have been recognized with numerous awards, including two James Beard Awards and a Lifetime Achievement Award from Nightclub & Bar Magazine. His commitment to excellence and education continues to inspire bartenders worldwide.
